I was absolutely craving tomatoes today - which is strange because I don't generally crave (or like) tomatoes. I ran to the store, picked up a few Romas and decided to stick with my favorite way to eat tomatoes - caprese/margherita. I came up with this super easy sandwich loaded with heart-healthy tomatoes and olive oil and topped with one ounce of mozzarella cheese. Including the two pieces of Ezekiel bread the whole meal only had 315 calories! Yummy, filling, easy, quick and healthy? That's what I call the perfect lunch!
To make, simply slice a roma tomato, place it on bread, drizzle with a tad bit of olive oil, garnish with oregeno, garlic salt and pepper, top with mozzarella and stick in a toaster oven for 10 minutes and voila! You have a healthy lunch that tastes delicious (and only took 10 minutes to make)! Enjoy
