Ingredients
- 1 cup whole wheat flour
- 3/4 cup oat flour
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 2 teaspoons cinnnamon
- 1/2 teaspoon salt
- 1 egg
- 3/4 cup greek yogurt
- 1/2 cup honey
- 1/4 cup canola oil
- 2 teaspoons vanilla
- 1 1/2 cups shredded carrots
- 1 cup shredded apple (peeled)
- 1/2 cup coconut
- 1/2 cup raisins
- 1/2 cup chopped walnuts
Instructions
- Preheat over to 350 degrees.
- In large bowl, combine whole wheat flour, oat flour, baking soda, baking powder, cinnamon and salt.
- In small bowl, combine egg, greek yogurt, honey, oil and vanilla and mix until well combined (should be creamy).
- Combine wet ingredients into dry ingredients until well blended.
- With a spoon, stir in carrots, apple, coconut, raisins and walnuts.
- Fill paper-lined muffin cups three-quarters full.
- Bake for 20 minutes or until a toothpick comes out clean.
- Cool for 5-10 minutes.
- Enjoy!

After posting my Healthy Banana Nut Muffins recipe, I received a call from my sister asking if the recipe would work for making zucchini muffins. I wasn't sure (because the consistency and sweetness of the banana makes a difference). I attempted to make apple cinnamon muffins using the recipe with no luck. After a few tweaks I created the following recipe, which can be used as a base for most muffin recipes.
