Glory Muffins

Ingredients

  • 1 cup whole wheat flour
  • 3/4 cup oat flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 2 teaspoons cinnnamon
  • 1/2 teaspoon salt
  • 1 egg
  • 3/4 cup greek yogurt
  • 1/2 cup honey
  • 1/4 cup canola oil
  • 2 teaspoons vanilla
  • 1 1/2 cups shredded carrots
  • 1 cup shredded apple (peeled)
  • 1/2 cup coconut
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat over to 350 degrees.
  2. In large bowl, combine whole wheat flour, oat flour, baking soda, baking powder, cinnamon and salt.
  3. In small bowl, combine egg, greek yogurt, honey, oil and vanilla and mix until well combined (should be creamy).
  4. Combine wet ingredients into dry ingredients until well blended.
  5. With a spoon, stir in carrots, apple, coconut, raisins and walnuts.
  6. Fill paper-lined muffin cups three-quarters full.
  7. Bake for 20 minutes or until a toothpick comes out clean.
  8. Cool for 5-10 minutes.
  9. Enjoy!

After posting my Healthy Banana Nut Muffins recipe, I received a call from my sister asking if the recipe would work for making zucchini muffins. I wasn't sure (because the consistency and sweetness of the banana makes a difference). I attempted to make apple cinnamon muffins using the recipe with no luck. After a few tweaks I created the following recipe, which can be used as a base for most muffin recipes.
